On the product page, size, color and other choices come from Variant option blocks in the Product information section. Each block shows only the option named in its Option name. An option that no block names does not show, and customers can only buy the variant the page opens with.
This is the most likely cause. Checkmate's default product page names its options in Variant option blocks, and the names depend on the style you started from. A style is one of the looks Checkmate comes with, and Theme styles compares them. The blocks name the options of the style's demo products, such as grind, glaze or size, and every style has a block for denominations, the amounts of a gift card. To see the names on your page, select each Variant option block in the editor and read its Option name.
If your products use other names, such as Size or Material, the page shows no choice for them. You can recognize this cause in quick view, the popup that opens from the eye button on a product card's photo. Quick view shows every option of the product, so an option that shows there and not on the product page is one that no block names.
Option name must match the option's name in the product's Variants section in your Shopify admin. Upper and lower case do not matter, but every letter and space does: Size does not match Sizes.
At the top of the editor, select Products, then Default product.
In the Product information section, select a Variant option block.
In Option name, enter the name of your option, such as Size.
Repeat steps 4 and 5 for each option your products have. If there are fewer blocks than options, click Add block in the Product information section and select Variant option.
Click Save.
With grind in Option name, the block shows the grind choices, such as Whole bean and Espresso, as buttons.
To show every option of a product in one block, clear its Option name. Then remove the other Variant option blocks, or each option they name shows twice.
The product has only one variant
A product without options has one variant, and the page shows no choice for it by design. You can recognize this cause in your Shopify admin: the product's Variants section lists no options. To offer choices, add options to the product in your Shopify admin.
The option name is translated
If your store is in more than one language and you translated your option names, a block compares its Option name with the option's name in the visitor's language. You can recognize this cause when the choice shows in one language and is missing in another. To show the option in every language, clear Option name in that block and remove the other Variant option blocks.
The block was removed or hidden
If you removed a Variant option block, or hid it in the editor, its option does not show on your store. You can recognize this cause in the editor sidebar when the Product information section has fewer Variant option blocks than your products have options. Add the block again with Add block in the Product information section, or point at the hidden block's name and click the button next to it to show it. Then click Save.
The Featured product section has its own Variant option blocks. Check them the same way when the choices are missing there.

Rule out the cache and the wrong theme
If your other recent changes don't show on your store either, start with My changes don't show on my store. If the choices come from an app, such as a product options app, the app controls them. What the theme controls and what Shopify controls explains the difference.
