Change fixed text that your theme shows across your store, such as the Add to cart button or the "Tax included. Shipping calculated at checkout." line in the cart. This text has no setting in the theme editor's sections. It lives in your theme's default content, which you edit from the themes page in your Shopify admin.
Text that you typed into a section, such as a heading or a button label, is changed in that section in the theme editor instead.
In the Filter items box, enter a few words of the text, such as Add to cart. Only the fields that hold those words stay in the list.
In the field that holds the text, enter your wording. The button on the product page uses the Add to cart field under Products.
Click Save.
The new wording shows on your store as soon as you save, if the theme is published. Your theme keeps it when you update to a new version, as Shopify's guide to theme updates describes.
Find text that shows in more than one version
Some text has two or more versions, and the theme picks one for each case. The line under the cart subtotal is one of them. "Tax included. Shipping calculated at checkout." shows when your prices include tax, and "Tax and shipping calculated at checkout." shows when they don't. Filter for a short word that both share, such as tax, and change each version you want to change.
A field can hold a word in double curly braces, such as {{ count }} in "Cart, {{ count }} items". The store puts a value there, so keep the braces and the word inside them as they are.
Text that default theme content does not hold
Text in a section or a block that you typed in the theme editor. Change it in the section.
Text that an app adds. Change it in the app's settings.
Checkout text is on the same page, under its own Checkout & system tab, and some of it also changes Shop Pay. Shopify's guide to changing wording lists the Shop Pay wording you can't change.
